Are the people I can refer to during my stay local or Italian?

The answer lies in the following quotation:

Local people have purposefully been employed for the running and upkeep of the guesthouse (with the exception of Ramadan or personal needs of the staff when a referenced Italian volunteer from Onlus WHY will step in).
